Treat Yourself: Ant Hill Cake Recipe
I realize that this is an organic blog, but it doesn’t mean that you have to say no to sinful treats forever. This recipe is for a very delicious, although not very attractive Russian desert called Ant Hill cake. Kids love making it (and eating it, of course). It is one of those “to die for” deserts. We’ll be making it from scratch, with some organic ingredients, so you shouldn’t feel completely guilty while eating it. Here is my Ant Hill Cake Recipe:
You need:
1 can of condensed milk for the cream
2 sticks of organic butter (or about 200 grams) + 1 stick for cream
2 tbsp of cold or lukewarm water
1/2 tsp of salt
1 tsp of baking soda +2-3 spoons of white vinegar
2 organic eggs
2 cups of organic white flour
2 tbsp of sugar
pecans or poppy seeds (all optional)
For dough: mix 2 sticks of organic butter with 2 blended eggs. Add 2 spoons of sugar and 2 spoons of water. Mix soda and vinegar together. Add to the mix. Add 2 cups of flour. Mix until your dough forms small to medium crumbs. If it doesn’t, add more flour and mix again. Put crumbs on a baking sheet (I usually use 2-3 baking sheets) and spread them evenly. Bake for 7-10 minutes or until light brown at 375 Fahrenheit. Cool them down.
(if you don’t feel ambitious, buy shortbread cookies and make small crumbs, but it wouldn’t be the same)
For cream: Boil a can of condensed milk (in the can) for an hour or two- the longer the better. ALWAYS HAVE PLENTY OF WATER IN YOUR POT, OTHERWISE THE CAN MAY EXPLODE! It happened to me once and it was not fun! Mix it with 1 stick of softened organic butter. Add a cup or two of chopped nuts or half a cup of dried poppy seeds. This is optional, but it certainly tastes better.
Mix cream with the crumbs. Form a little hill or whatever you can, because it is quite messy. I usually wet my hands in cold water to make the process easier. If it is too hard to form, add a little bit of water and try again.
Put it to the refrigerator. It always tastes better the next day, but you can eat it an hour or so after it is made.
You may cover it with chocolate icing if you wish (white or dark).

Yes, very simple and everyone loves it. It is not very attractive, though.
When boiling condensed milk in the can punch a small hole in it. This will prevent can from exploding.
