Organic Recipes: The Easiest Organic Chicken Soup
I don’t know about you, but soups make my life much easier. Everyone in my family likes them; they are easy to make and are pretty filling. Our favorite soup is Organic chicken Soup which is perfect for everyday meal, especially if it is chilly outside.
All you need is:
4 legs or half breasts of organic chicken (we buy it at BJ’s Wholesale, because it is the cheapest organic chicken we’ve found)
1 large organic carrot
2 medium to large organic potatoes
Garlic (at least one clove. I usually put 4-5, but I am in love with garlic)
1 small to medium onion (doesn’t have to be organic, because conventionally grown onions have very low pesticide levels)
Salt (sea salt is the best)
Bay leaf (1-2)
Homemade or organic noodles (2-3 handfuls)
Spices (whatever you like. We use dill and parsley)
Take a medium pot and fill out half of it with water. Put chicken. If you use chicken breasts, cut it. If you use chicken legs, there is no need. Bring to a boil.
Cut carrot, potatoes and onion in small pieces. No need to shred, but the pieces should be pretty small. Some people like to sautee the vegetables(carrot and onion) before adding them to soup. I personally don’t think it makes a big difference taste wise. It just adds more work. If you decide to sautee, use olive oil.
Put the vegetables into the pot with chicken. Boil on medium for about an hour. Add bay leaf, chopped garlic, spices and noodles. Add sea salt. Boil for another 10 -15 minutes. Let it cool and enjoy.
If you feel like improvising, you can always add other vegetables to it. You may add traditional celery, corn or mushrooms. Make sure you buy organic celery though, because conventionally grown celery has very high pesticide levels and therefore is not very good for you.
Some people like to add a teaspoon of butter at the very end. It does taste better with butter, but it is up to you if you want the extra calories or not.
