Organic Eating: Organic Russian Style Pancakes

Making pancakes from scratch can be a nightmare unless you know the perfect recipe.

Proper Russian pancake (also called BLINY) should be round, almost see-through thin and light.

I have ruined quite a bit of products and wasted many precious hours and nerves trying different recipes. This recipe is very easy and healthy; it requires minimum products and it has never failed (even at the times when I was just learning to cook).

BLINY:

You need:

200 milligrams of organic milk (any fat content is OK, we use whole organic milk)
75 mg of water
half a tsp of salt (or 1 tsp of sea salt)
100 grams of organic white flour
2 organic eggs
50 grams of organic butter

1. Mix water with milk

2. Put flour and salt in a separate bowl. Make the hole in the middle and place eggs in. Mix eggs and flour.

3. Start gradually adding water. Mix everything until blended.

4. Melt 50 grams of butter on a pan (do not use oil). Add half of it to the mix. Set aside another half. Mix well

5. Heat pan on high, then reduce to medium heat. Remember that the pan should always be a little greasy. I usually dip a paper towel into melted butter and grease pan with it when it is dry. If you have a non-stick pan, just dump all the 50 grams of butter to your mix.

6. Pour a small amount of the batter into a pan to create a thin even layer. I use a large bowl soup spoon.

7. You need a minute or two to fry one said; then turn or toss over and fry for another 30 sec. to a minute.

8. Put your masterpiece blin on a plate.

9. Eat.

You can eat them with caviar or with organic sour cream or yogurt (you can add honey or stevia to it if you wish)- this is the traditional way to eat them in Russia and Eastern Europe. You can use Nutella spread, Raspberry preserves or pretty much anything you are craving.
